Strawberry and Peach Mascarpone Trifle

This beautiful Strawberry and Peach Mascarpone Trifle is the easiest dessert I’ve made in a while, and it is SO dang good. There are layers of pound cake, strawberries, peaches, and mascarpone whipped cream-perfect for strawberry season!

It seems like we’re at a stage in life where there are so many fun baby showers and parties almost every weekend, and I am always looking for simple desserts to make. This trifle looks fancy and no one will know how easy it really is!

It’s also strawberry season, so this is the perfect recipe to make with your buckets of strawberries!

How To:

  • Start with a loaf of pound cake. You can use homemade or store-bought! Slice it into bite-sized cubes.

  • Slice some fresh strawberries and fresh peaches.

  • Make the mascarpone whipped cream-the best part!

  • Assemble the trifle by layering pound cake, fruit and then the whipped cream. The best part about a trifle is that it doesn’t have to be perfect! Have fun with it, and the more rustic the better.

  • Store in the refrigerator until ready to serve!

Strawberry and Peach Mascarpone Trifle

Ingredients

  • 1 loaf pound cake, homemade or store-bought
For the Mascarpone Whipped Cream and Fruit
  • 2 cups heavy whipping cream 
  • 8 oz container mascarpone, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 cups strawberries, sliced
  • 2 cups peaches, peeled and sliced

Instructions

For the Trifle
  1. Slice the pound cake into bite sized cubes. 
  2. Slice the strawberries and peaches.
  3. In a mixing bowl fitted with with a paddle attachment or hand mixer, beat together the mascarpone with sugar until combined. Add in vanilla and mix to combine.
  4. In a clean mixing bowl fitted with a whisk attachment or hand mixer, beat the heavy cream on high speed until stiff peaks form, about 3 minutes.
  5. Add the whipped cream into the bowl of mascarpone and carefully fold it in using a rubber spatula until combined.
To Assemble
  1. The trifle has 3 layers of pound cake, 3 layers of fruit, and 3 layers of whipped cream. Begin with a base layer of pound cake. Top with one third of the fruit and then spread one third of the whipped cream on top. Repeat and finish with a top layer of whipped cream and fruit. Don't worry about perfection, the more rustic the better.
  2. Refrigerate until ready to serve. Enjoy!

Notes:

Store in the refrigerator for up to 2-3 days.
