When it comes to Japanese cuisine, tuna (maguro in Japanese) plays a starring role. With its versatility and unique taste, tuna offers a range of options to tantalize your palate. At Maguro Bar, we commit to bringing you fresh seafood sashimi including the most demanding Bluefin Tuna.  July to Mid-October is the bluefin season in Australia, which means we have a larger supply of toro sashimi than normal days. 

Our expert fishmongers select the best sashimi-grade bluefin tuna by examining the color of the fish tail in the fish market. This meticulous process guarantees that only the highest quality tuna makes its way to our shops. Then, our shop chefs will skillfully develop the cuts from a whole bluefin tuna (over 100kg) into three indulgent varieties –  Otoro, Chutoro and Akami, we offer a wide selection to satisfy all toro lovers’ cravings. Otoro (大トロ): Indulge in the Buttery Melting Delicacy

Otoro, the most luxurious and expensive cut of maguro, is located primarily in the abdomen of the tuna and is renowned for its high fat content. Though visually more white than red due to the high fat levels, Otoro’s fat content does not make it taste greasy; rather, it melts in your mouth. The rich marbling in Otoro gives it a buttery texture and a subtly sweet flavor. 

Chutoro (中トロ): A Perfect Harmony of Meatiness and Fat

Chutoro strikes the perfect balance between Otoro and Akami. This cut boasts a blend of lean and fatty meat, offering a unique texture that is both meaty and succulent. Due to its rarity from the cut in between the Akami and Otoro, Chutoro is considered a prized gem of a tuna fish. 

Akami (赤身): The Bold and Versatile Classic

Akami refers to the lean, meaty part of the tuna that is vibrant red in color. “Akami” means “red part” in Japanese. It is the most widely used cut and is found much more in quantity in the tuna fish compared to toro. So, we often use them as sashimi or featured in sushi rolls. With its robust flavor and firm texture, Akami provides a satisfying experience that showcases the essence of the tuna fish.
