Kitchari

Kitchari (made with mung beans and rice) is a prized healing food in Ayurvedic medicine. Mung beans are exceptionally high in protein and fiber and a rich source of antioxidants and phytonutrients.

Serve with peas and Chimichurri or Cilantro-Mint Chutney!

Mung beans are considered to be an alkaline food and combines well with rice. Soaking the rice and mung beans for several hours before cooking will decrease the anti-nutrients like phytic acid and also make them easier to digest.

Kitchari, like Congee, is a traditional healing "porridge" that has been known to increase vitality and build strength in a weakened individual.

This recipe is from the Ayurvedic naturopath that Dana has worked with for 10 years. He's American but lives in India and serves as Amma's doctor.
